Using the github scheduled reminders feature, we set up a reminder that pings us when there are open PRs. Some of us are pinged in Slack via the @username feature (where the username between github and slack matched). Is there a way to connect the Slack usernames to the github usernames so that those users with usernames that don’t match are also pinged?

Are you using an enterprise instance? SAML users are mapped to a user ID based on the raw value of the
NameID attribute passed in your SAML response. If yes, you should be able to map the username by manually updating each users stored
NameID attribute value to the new value that your IdP is providing.
